Quick & Easy “Enchiladas”

This is for a night when you want to throw something together quickly! I need to start by saying that these are absolutely NOT your traditional enchiladas made with corn tortillas. They are not labor-intensive, however, we do love them! Thank you to my sweet friend Tiffany , who shared this easy recipe with us :-) ingredients: flour tortillas (i use regular tortillas for the family and a few low carb for me) canned chili (you definitely want to get a good canned chili, I will use the H-E-B brand or Annie's) canned beans (also like to use a good one, typically H-E-B brand) shredded cheese In a baking dish, drain the beans into the bottom of the baking dish. mix the beans and the chili together in a bowl. Take your tortilla and pat it into the liquid in the casserole dish. Fill your tortilla with the bean and chili mixture, and add some shredded cheese, then roll up into an enchilada. Do that with the remaining enchiladas. Usually makes about 12. If you have any chili mixture left over you can pour it on top. Cover the enchiladas with shredded cheese and bake for about 10 minutes. there you have it, a super easy and quick meal. I serve with sour cream, salsa, and chips plus a side salad if you want to add some veggies :-) im reading this set of verses today and I'm so thankful we have the gift of the Holy Spirit, Who truly does counsel us and help us: 26 But the Counselor, the Holy Spirit, whom the Father will send in my name, He will teach you all things, and bring to your remembrance all that I have said to you. 27 Peace I leave with you; my peace I give to you; not as the world gives do I give to you.
