Creamy Chicken and Green Chilies Soup

Creamy Chicken and Green Chilies Soup Hello friends, I hope you are doing well:) I’m posting this recipe for my girls! I made this soup last night and they absolutely went wild over it. It’s an adaption of a white chicken chili recipe, but Emma forgot the beans so i added a few things, and it turned into Creamy Chicken and Green Chilies Soup. Emma if you are reading this HA! I love you, but you will never live it down…I’m jumping right into the recipe! Creamy Chicken and Green Chilies Soup: 2 lbs Chicken (you can use chopped rotisserie chicken, grilled chicken breast or whatever you have in hand. I used ground chicken that I had in my freezer) 1 large onion, chopped 3 cloves of garlic, chopped One small yellow sweet pepper, chopped One large carrot, finely chopped or you can use a cup of shredded carrots 2 cans green chilies 1 can Hill Country Fare Tomatillo Salsa 1/2 block of cream cheese 2 Tbsp Apple cider vinegar Garlic salt Tony Chachere seasoning One package of frozen avocado Shredded cheese blend (we use Monterey Jack & cheddar blend from Costco) Sliced green onion as a garnish Sliced black olives are optional Serve with tomatillo cream cheese dip (recipe also below) & chips. In a large pot, brown your chicken in about an inch of water, throw in all of your chopped onion, garlic, peppers, & carrot. Let cook until tender. Add the half block of cream cheese and let it get soft. Then mix in the cream cheese into the chicken & veggie mixture. At this point I add about 2 Tbsp Apple Cider Vinegar. Sprinkle the mixture with garlic salt and Tony Chachere seasoning. You can then cover your mixture with water or chicken stock (I just used water) until it is about and inch over water covering the mixture. Add the two cans of green chilies (do not drain). Add the tomatillo salsa. Bring to a simmer and let simmer while you make the tomatillo cream cheese dip. Just before serving, add the frozen avocado pieces. This will cool the soup down a bit so it’s not boiling got for you family. Spoon into bowls and garnish with shredded cheese, a couple of dollops of the cream cheese dip, sliced green onion (and black olives if you like those). Serve with more Tomatillo Dip and chips. It will be SPICY! But I can’t tell you how much everyone loved this. I think it would be good with some frozen corn thrown in as well but we loved it just as is. Tomatillo Cream Cheese Salsa One block of cream cheese One can of hill country fare tomatillo salsa (or any brand but that one IS the best) Garlic salt I just microwave all of this and mix well! You could heat this on the stove as well. That is it, so easy and simple, but it’s always a hit! This space has always been a place I can document our favorite recipes and I do return to them often. Every year I look for my Turkey Recipe ( you can Google the name of my Blog and Turkey and it will come up). I’m not going to be linking to other posts or doing any of those fancy things you see in other blogs. It just takes up so much time and I found that I began to dread blogging as a result. I have no time for that. I am choosing to be present for my family so I’ve decided to place my focus on them 100%.
